Baked Brinjal Vegetarian Salad

Baked brinjal salad

Sweet Passion
Pan-fried the egg plant with garlic, onion, cheese, olive and stuffing the semi-cooked ingredients back to it skin and baked with olive oil & cheese for 20 mins in the oven, finally topped with freshly cropped tomatoes, fresh mint and cheese. Ideally for bruschetta with toasted italian bread - a slice of goodness!
