Jackfruit Cheese Cake

This version of cheese cake is light but super strong in flavor and lovely for jackfruit lover!  I am using the jackfruit sponge as cake base crust. Main ingredients are fresh jackfruit juice, cut pieces of jackfruit and just a small amount of maple syrup to give it a wonderful sweet taste. Topped with jackfruit light whipped cream flavor and taste irresistible. I will say this is an unforgettable "Jackfruit"cheese cake from heaven.

Pomegranate in season now:) This giant big fruit is from Israel. So rich in color and sweet beautiful flavor. Making the spinach salad so colorful and refreshing. I prefer it with light dressing of virgin olive oil & balsamic vinegar in fruit flavor salad.

Macadamia Wolf-berries Goji Brownie

Chinese Wolf Berries or Goji are mainly a healthy ingredient that good for baking too:) I baked this brownie for Chinese Lunar New Year reunion dessert. It's very  delicious with simple ingredients of 150g Goji, 55% of dark chocolate, cheese and macadamia nuts. The end product is fabulous with macadamia nuts are cholesterol free and contain important nutrients, including protein and fiber. A marvelous additions to the brownie dessert.

These tiny love shapes French tea cakes are soft and springy with a slightly domed top and a lovely golden brown crust. Take a bite and you can taste the moist subtle flavor of butter, saffron and almonds. The saffron flavour is beautiful. The name "financier" is said to derive from the traditional rectangular mold, which resembles a bar of gold. Another theory says that the cake became popular in the financial district of Paris surrounding La Bourse du Commerce. This lovely heart shapes are just as good as it taste:)

If you are a jackfruit lover. This will be a lovely and unique cake. Jackfruit is a tropical fruit well-loved for its fragrant and beautiful colour yellow flesh especial in South East Asia. I am proud to say this recipe is almost original and very tasty. Just a simple yet delicious ingredients use here. Will definitely make for my friends again soon:) tummy!

Asparagus Scallop with Red Wine Sauce

This asparagus scallop recipe is a simple and elegant dish. It's only has few ingredients:- Hokkaido scallops, mini asparagus and tofu as a base, pan stir-fry all ingredients until golden brown. I choose to go with thick red wine, sea salt, vinegar and butter for topping sauce. Simple and wonderful for light lunch.

 This spectacular black bamboo charcoal bread is very nice and interesting for sandwich. It's looks like your regular dinner bread loaf, except of course they're all black! I prepared it for lunch with ham, fried egg and cheese for a change! It's very soft, delicious and beautiful.

Caramel Peace & Pear

I like to prepare caramelized peaches and pears for dessert. It's easy and quick as a simple sweet dessert after main course. With a little butter, raw sugar, maple syrup and cinnamon power. It's excellent to serve over pancakes or even ice cream. Yummy!


Ingredients: 4 persons
Fruit:
3 Red Bartlett pears
3 Peaches
A handful of blueberries

Dries & spice ingredients: 
1 tsp of cinnamon powder or 1 stick of cinnamon
50 g French butter
50 g Raw brown sugar
50 ml Maple syrup
5 g Sea salt 

Method for cooking:
1) Sauteing the cut fruit pieces(cut side down) with butter, cinnamon powder and sea salt on sauce pan over relatively high heat until light brown.
2 Sprinkle raw sugar on top and continue cooking until the sugar almost caramel stage.
3) Use a spoon drizzle the maple syrup glaze on top and bring to bake for 5 mins with temperature 180C/350F.
4) Done and cool down. Serve with fresh blueberries on top or ice cream.

Time: 5 minutes preparation / 12 minutes cooking

Chocolate Banana Caramel Gold Leaf Yule Log

The beautiful thing of this little tinny yule log is the caramel banana that wrapped inside the chocolate roll does compliments the flavour of the semi sweet dark chocolate topping. Added on the crunchy almond nuts coated with bitter dark chocolate, resulting the whole log cake slightly crunchy, nutty, sweet, bitter, caramel and terribly addicting. Final touches with beautiful gold leaf! Absolutely stunning and beautiful!
