Absolutely a good recipe for cheese cake. I love it and the best thing is make with fresh lychee and no artificial flavor or essence at all. The fresh sweetness of the lychee melted in my mouth:) It's my favorite!
This is a healthy version of Baked Tapioca Cake or Kuih Bingka Ubi. I choose fresh ingredients, less sugar and coconut milk. Idea to go with maple syrup when serving hot. This is one of the traditional Nonya Kuih so easy to make yet so good to taste.
Pan-fried the egg plant with garlic, onion, cheese, olive and stuffing the semi-cooked ingredients back to it skin and baked with olive oil & cheese for 20 mins in the oven, finally topped with freshly cropped tomatoes, fresh mint and cheese. Ideally for bruschetta with toasted italian bread - a slice of goodness!
